The company “Karbounis”, based in Eleousa (Bisdouni), in the municipality of Zitsa, Ioannina, is active not only in the prefecture of Ioannina, but also throughout Epirus and many other parts of Greece and abroad. However, the journey of Karvounis Company in the field of catering services begins in 1978 by Nikos and his wife Vasiliki Karvouni, everyone's called “Vasilo”, as they used to name her. Until 1978, and for years later, they were occupied in the primary sector, like almost all the citizensinEleousa. They were tobacco growers and farmers. N. and V. Karvouni also produced tobacco, vegetables, grapes, their own wine and tsipouro. Along the way, they created their own agricultural unit. Sociable and kind people, Nikos and Vasiliki participated in social, cultural and political events. They met villagers, residents of other villages in the basin. Special was the Their special meeting with new students of the University of Ioannina was determinant for their business carrier. With their encouragement, and especially of Alekos Zoukas, a student and a very good friend, they decided to organize in a simple, but warm form on the ground floor of their house, a SMALL CAFÉ for friends initially. There they slowly began to serve their own wine and tsipouro and appetizers from their own agricultural products. This small café quickly became the KOUTOUKAKI of villagers, friends from other villages, young people and students from the city of Ioannina. The time for entertainment and rahati was short. In the process this small café became "TAVERN" and finally "TAVERNA KARVOUNI". The tavern was located in the center of Eleousa, on the road Polytechniou 15 and in front of it was the central square of Eleousa with the perennial plane tree. In the square was the community store of the community of Eleousa, which in 1999 became the first town hall of the Municipality of Passarona.The patrons of Karvounis Tavern enjoyed the delicious appetizers - food, wine and tsipouro, produced by the Karvounis family from Debina, the local grape variety. The tavern was open mainly in the evenings of the winter months, because Nikos and Vasiliki Karvouni, like all the residents of Eleousa, in other months, were occupied with agricultural and livestock work, mainly in tobacco cultivation, but also in construction professions. The tavern quickly became the hangout for the area for all the months of winter.
In 1980 friends - regulars named the hangout "TAVERN THE WINTER NIGHTS" and by the name it became known to everyone everywhere. Over time, the tavern was flooded with regulars, mainly young people and students. Everyone enjoyed the authentic cooking of Vasilo and the roasts of the roaster Nikos- Karvounis, as friends - regulars loved to call him. The conversations in the Tavern were long and accompanied by a bouzouki or guitar, and the singing quickly began. Many times, when Nikos Karvounis with his characteristic style and glass, was finishing his work, he was invited to the groups and participated in their conversations and their fun - feast. Many events and feasts were organized and held in the tavern of Karvounis, either spontaneously or for a celebration. The student nights organized in the tavern were common. Special celebrations were those that took place for the graduation of a student. During the feast, they posted the diplomas in the tavern, signed by Nikos Karvounis. The evening was important in 1981 when a table in honor of Charilaos Florakis was organized in Karvounis' tavern, after a speech he addressed to the residents of Eleousa and the area. The tavern was now known and established in the field of catering in the area, and had entered the daily entertainment of people. Nikos and Vasiliki Karvounis had left their agricultural work, keeping a few crops for the needs of their tavern. They dealt mainly with the tavern with the ethos that always characterized them and tried for high quality of the goods offered.
In this climate, Christos and Sotiris, who were the children of Nikos and Vassiliki Karvounis, began in 1981 to become more active in the company. The second generation of the Karvounis family was now actively entering the restaurant business. In 1991 they decided to create a new business in the catering sector, with their established name "TAVERNA KARVOUNI", in a new privately owned space in Eleousa. Their new business was located on Republic Avenue, in the location of Feres - Dangil Wells opposite the Eleoussa High School
Since 1993 their new business has been operating in the large and impressive premises, with a special brand, and always with the well-known quality of the Karvounis family and efforts for greater improvement. In the elegant space of the halls ARIADNI and DIONYSOS, which have a capacity of 800 people, a number of events with social, cultural and political content are held, organized by the Karvounis Bros., individuals and institutions. Folk and artistes, accompanied the patrons in their entertainment during the events. In various events held at the tavern, important personalities of the political and wider cultural and social world were present. Christos and Sotiris continued with an unlimited professionalism, an authentic ethos that they learned from their parents and they themselves cultivate. They behave with unlimited respect and friendliness towards their employees, and with consistency and courtesy towards their suppliers and any other associates.
In 2015, the Karvounis Bros. expanded the provision of their services in the field of catering. They undertake the mass preparation - provision of ready meals in schools of Ioannina. The guarantee in this action was the respectto the children and the quality of their products. For these reasons, the institutions of the local governmentand education trusted them. For the same reasons again the Local Government and the Refugee Protection institutions, in the same period trusted them, and the Karvounis Bros. undertook the preparation and provision of meals in refugee shelters of the public administration in the prefecture of Ioannina. For the execution of their services in the area of mass catering, but also in all services in the area of catering, indoor and outdoor, the Karvounis Bros. have the necessary manpower, the appropriate kitchen equipment and transportation with privately owned new trucks. They have the capacity, in mass catering, to provide food for more than 3000 people per day. The relationship with the workforce is always fully governed by labour law. And as far as the technological equipment, fixed and mobile, is concerned, they make sure that they operate in accordance with the public health legislation and the rules of the Code of Motor Vehicles for their vehicles.
In 2020, after a long and successful course in all areas of catering, the Karvouni Bros. decide to expand their activities to other areas of catering under the name "KARVOUNI BUSINESS", shaping their brand in a new form. For the professional career of Christos and Sotiris Karvounis, another milestone begins as "KARVOUNI BUSINESS". They move to Ioannina and Thessaloniki, providing services in mass catering and again, in the field of canteens. They take over the operation of the CAFTAIRIES at the HAZIKOSTA HOSPITAL in Ioannina. They create, along with their new central brand, a special brand for the operation in the canteen at Hatzikosta. In the same period, they also undertake the operation of another canteen in Thessaloniki at the EKEMS CAMP. They also create a special mark there, "EKEMS", for their services in the canteen of the camp.
In 2021, Nikos and Mario Karvouni began to actively participate in the operation of the EKEMS canteen in Thessaloniki. They are the children of Christos Karvounis and Effi Stamos. The children participate with great responsibility in the operation of the canteen, alongside their studies at the University. This is how the third generation of the Karvounis family begins to actively enter the catering business, with the activation of Nikos and Marios in "Operation Karvounis".
